Mexican Meal Prep

PER 2 MEAL PREPS
Ingredients
250g wholegrain Mexican microwave rice (1 packet)
300g chicken breast, chunks
150g frozen sliced peppers
Fajita/taco seasoning
Optional extras (worth it)
60g Reduced fat cheddar
Jalapeños
Salsa
Sour cream
Instructions
Preheat over to 200 degrees (c)
Season chicken breasts with Mexican seasoning
Cook chicken for 20-25 minutes (until cooked through & piping hot)
Whilst chicken is cooking, separate 125g rice & 75g peppers (not cooked) into 2 microwaveable containers
Once chicken is cooked, let cool and add to container with cheese, salsa, jalapeños & sour cream
Store in a sealed container in the fridge for up to 2 days
When ready to eat, remove lid and microwave for 3-4mins until piping hot

If seriously bulking up, or eating post workout - I recommend using a full packet of microwave rice (250g) per serving
